I know EVERYONE knows how important breakfast is, and to NEVER skip it, even if you're strapped for time. Here's my family's favorite out-the-door breakfast:
1 English muffin, split open with a fork (to increase "nooks and crannies." Don't use a knife).
1 egg
1 slice cheese
optional - pre-cooked bacon, ham, sausage
Crack open your egg and gently place it on the bottom half of the English muffin (it might spill over the edge, that's ok.) Break the yolk with a fork.
Put it in the microwave for 45-60 seconds.
Remove from microwave, add cheese and additional toppings (tomato, bacon, ham, etc. - be creative, you get the idea!)
Put it back in the microwave for 30 seconds and ... VOILA! BREAKFAST!
It will be VERY VERY hot, so stick it in the freezer for a minute or two before you give it to little hands!
Sit back, and enjoy your morning!
