I tried this recipe from the book: "Raw Food Made Easy" by Jennifer Cornbleet. It's a fabulous cookbook for those who want to try to eat more raw food. Raw food is of course the healthiest thing you can put in your body. Here is an amazing recipe you have to try to believe:
Chocolate Mousse, 1 cup - 2 servings
1/4 cup pitted medjool dates, soaked for about 30 minutes
1/4 cup pure maple syrup
1/2 teaspoon vanilla extract [optional]
3/4 cup mashed avocados [about 1.5 avocados]
1/4 cup plus 2 tablespoons unsweetened cocoa
1/4 cup water
Make sure to pit the dates. Place dates, maple syrup and optional vanilla in a food processor and process until smooth. Add avocado and cocoa powder and process until creamy. Add water and process briefly. Store in sealed container in refrigerator for up to three days or two weeks in freezer.
I like to top the mousse with fresh cut strawberries. Enjoy!
Tip: You can sometimes find the medjool dates at Costco in bulk.
Tip: You can use less cocoa powder for a more mild taste.
