My neighbor, Helen, created this recipe and it's one of my favorites. You can make it using your tomatoes from your garden. It's one of those recipes that when you eat it, you feel healthy and light. It's super easy to make!
2 tbsp oil from artichoke jar or olive oil
2 cups chopped artichoke hearts
2 shallots peeled and chopped (shallots are located by the fresh garlic and look like small onions)
5-6 chopped fresh tomatoes
1 tbsp chopped fresh basil
1/2 cup vegetable broth
Angel hair pasta, cooked
Add oil and heat over medium heat. Add shallots and caramelize in oil. Add tomatoes, artichoke hearts, basil and vegetable broth. Let simmer until thick. If it gets too thick, add more vegetable broth. Serve over angel hair pasta.
