Last week I was in the mood for stuffed peppers and having very little time for lunch, I decided to come up with my own recipe.
You need:
-- Red or green peppers
-- Whole grain rice
-- Canned beans
-- Glad "Simply Cooking"Microwave Steaming Bags
Cook rice and add seasoning of your choice. Add canned beans of your choice (adding beans to rice makes a complete protein). (You may prepare the rice/bean mixture the day before and refrigerate.) Next, stuff peppers and top with your favorite cheese. Stick into cooking bag and microwave for four minutes and voila! You have a delicious, healthy meal. Enjoy!
