I just tried this recipe tonight and we all loved it! For the kids, I just made a simple cheese version, but for the adults, we had all the toppings. This would be great to serve at a dinner group too. And it uses veggies from our summer gardens!
Vegetable-Pesto Pizza
-- Flatbread such as Tandoori Naan whole-grain bread
-- Pesto, homemade or purchased
-- 1 cup mozzarella cheese (try using an imported gourmet mozzarella cheese)
-- Yellow squash, thinly sliced
-- Tomatoes, thinly sliced with seeds removed
-- Approximately 1 cup very small, slightly undercooked broccoli florets
-- 1/2 cup sliced scallions
Preheat oven to 400 degrees. Place flatbread on cookie sheet. Spread pesto on flatbread and sprinkle 1/2 cheese on top. Layer squash, then tomatoes, then broccoli and top with scallions. Sprinkle remaining 1/2 cheese. Bake in oven for 10-12 minutes or until golden brown. Enjoy!
