My husband loves cabbage and since I grew up without it, I've looked around for good uses for it beyond plain old steamed cabbage. My favorite is lo mein.
4 Tbsp cooking oil
1 lb meat of choice (steak is our favorite)
1 stalk celery, finely chopped
1 carrot, finely chopped
1 inch ginger, minced
1 1/2 c cabbage, chopped
1/2 onion, minced
2 tsp cornstarch
2 pkg ramen noodles (nix the seasoning or save it for something else)
1/2 tsp sugar
1 Tbs soy sauce
1/2 tsp salt
Boil noodles as directed, drain, rinse in cold water and add a few drops oil and mix to keep from sticking. Set aside.
Slice meat very thin. Mix together meat, ginger, onion, cornstarch, sugar and soy. Set aside to marinate.
Heat wok (or large pot) and add 2 Tbs oil. Stir fry meat mixture for roughly two minutes - do not overcook. Pull out meat and reserve.
Add 2 Tbs oil, heat, stir fry vegetables for two minutes, add noodles, stir well and cook for a few minutes. Add meat mixture, salt and soy to taste. Stir to heat, and serve.
My 1-year old loves the noodles and most people don't really remember that there's often cabbage in meals like this. Enjoy!
