If you are a busy mom such as myself, YOU MUST try this recipe! Not only is it the holidays, but this week's schedule is crazy with PTO, SAC, doc appts and work. I needed an idea for breakfast on the run. I looked in a Disney Magic Kitchen Cookbook and found this yummy recipe.
INGREDIENTS:
Nonstick cooking spray
1/2 cup butter, softened
2/3 cup packed brown sugar
1 tsp baking soda
2 eggs
1 3/4 cups whole wheat flour
3 cups multigrain cereal flakes with blueberries (I used strawberry)
Put the butter in the mixing bowl, beat with mixer for 30 seconds. Add brown sugar and baking soda. Beat until mixed. Add the eggs, beat until mixed. Add flour and beat until the mixture no longer looks dry. Use a wooden spoon to stir in cereal.
Pak the mixture into a 1/4 cup measuring cup. With rubber scraper, scrape it out of the cup onto prepared cookie sheet. Press mound of dough with your fingers to flatten it slightly. Repeat with remaining dough, placing cookies about 3 inches apart.
Bake cookies for 8-10 minutes at 350 degrees. until edges are golden brown. When done, transfer cookies to a wire rack, let cool.
Makes 12 cookies.
