This is a great vegetarian recipe that even kids will eat!
1.5 pounds asparagus (snap ends off)
1 pound bow tie pasta
1/4 cup butter
2-3 cloves garlic, finely chopped
1/2 cup heavy cream
1/2 cup vegetable broth
Juice from two lemons squeezed
Salt (sea salt preferred)
Fresh Parmesan cheese
1. In a large pot, bring water to boil and cook asparagus for 2 minutes (do not overcook - they should be tender-crisp). Set asparagus aside.
2. In same pot, cook bow tie pasta according to package directions.
3. In a large pan, add butter and garlic. Then add cream and broth. Stir in lemon juice and a pinch of salt. Bring to a boil and simmer for 3-5 minutes.
4. Cut cooked asparagus into 1-inch pieces and add asparagus and bow tie pasta to pan. Toss together with sauce. Turn heat off and let pasta sit to allow sauce to thicken. Add more salt if desired and sprinkle with Parmesan cheese.
