I had a "moment" last week. I was stressed about dinner and the five places we needed to be that night. My friend brought a casserole over. Great! There's dinner -- mark that one off the list. Only one problem. It needed to cook for an hour! I was not going to be home, so I thought I would turn my oven on a low temp and let it bake for a few hours.
I called my next door neighbor to let her know I had dinner in the oven and would not be home for awhile and to call the fire department if she saw flames. She said: (here is the ah ha moment) "Why don't you just bring the casserole over and I will bake it for you. I will be home."
Wow! Have a neighbor pop in a casserole you have already prepared, so it's ready when you get home (her oven or yours). Brilliant. You can only stand so many crock pot meals in a week, so this is great!
