I just learned how to make French crepes and thought I'd pass on the recipe/instructions. They are super fun to make, easy to make, the kids love them and I bet it would be fun for get-togethers too!
First, you need to get a crepe maker. I bought a "Cucina Pro" crepe maker that cost just under $40. I will attach a photo of it, so you know what to look for.
Make the batter (this will make about 18 large crepes):
12 eggs
6 cups milk
5 cups flour
10 tablespoons butter (melted)
Jam or jelly (strawberry, blackberry, etc.)
Mix eggs, milk, flour and butter together and beat with mixer for about 2 minutes or until smooth (a few lumps may remain).
Turn crepe maker on and wait until light indicates it is ready (mine turns green). I keep my temperature on a "3," which is half way.
Use a ladle or measuring cup and pour about 3/4 cup of batter onto the heated crepe maker. Use the wooden tool (shaped like a T) and immediately spread batter clockwise to fill total area. Cook for 30-45 seconds and when light brown on bottom, flip and cook other side for 30 seconds.
Bring crepe to a dinner plate. Spread jam around crepe leaving about 1 inch around the sides without jam. Fold crepe almost in half; then fold each side in making it look like an envelope. Serve immediately. You can pick it up and eat. Easy for kids!
Note: The crepe should be thin. If your crepes are too thick, add more milk to batter and/or use less batter in crepe maker.
