Homemade Sweet Potato Fries

I got this idea from my friend Jamie (ceoMom 333) and my girls love them more than regular fries. They think they taste sweet.

Peel and cut one or two sweet potatoes into thin pieces (the shape of a french fries works best).

Put a little olive oil on the bottom of a cookie pan. Spread out the sweet potato fries. Sprinkle them with a bit of kosher or regular salt and drizzle a bit of olive oil on top of them.

Bake at 375 for about 15 or 20 minutes (depending on your oven). I also turn them so they brown a bit. I like mine a little bit crispy.

You can also cook them on a grill if you have a grill pan or make them into wedges instead.

Would this work with yams? i have a few in my storage room. I'm not sure if they would have to cook longer or the same.
Maybe I'll try them and let you know what I find out.

I will definitely have to try this with sweet potatoes. Sweet potatoes are better for you than regular potatoes. Yams might work too, but they might be a little too soft. If it doesn't work, wrap your yams in tin foil (like a baked potato) and bake in the oven. Serve with butter and brown sugar on top. Yum!!!! Yams are also very healthy!!!

I finally tried this tonight! They were so GREAT that this will become a staple in our family. I ended up baking them at 400 degrees for about 30 minutes, because we liked them extra crispy. Next time though, I'll slice them even thinner. My kids didn't even notice a difference. I'll never make regular french fries again. Thanks again!
