Veggie Burger on a Wheat Pita and a Caprese Salad

This is another idea from a friend. Brenda (ceoMom 450) uses wheat pitas instead of hamburger buns. I love these. The kids eat less bread and more of the good stuff. They even call them little pizzas.

Put half of a veggie burger (with melted cheese on top) in half of the pita and cut it into triangles. My girls like them plain, but you can dress them up with regular hamburger toppings.

I like to serve them with a little caprese salad.

Cut up fresh mozzarella (Costco has a two pack for a great deal) into small cubes, cut in half Cherry or Roma tomatoes and drizzle a bit of balsamic vinegar over them. My girls gobble this up!

Do you make the veggie burgers with a mix (like the one I found at Good Earth) or do you purchase them at the store?

I LOVE veggie burgers! This is a must try for me. Also, I buy my boca burgers at Costco or the Morning Star brand carried at most stores.
