"Boing Boing" Pasta

One of our favorite summer vegetable dinners:

Boil 1 bag of spiral/rotini noodles until cooked; drain and set aside.

Cook meat of choice, chop, and set aside (I generally use 1 breast of chicken, or a few slices of bacon).

Chop, then combine:
1 medium onion
1 yellow summer squash
1 zucchini
and any other vegetables you would like (bell peppers, carrots, etc.)

Heat a large pan and add:
3-4 Tbsp olive oil
1-2 cloves garlic, minced

Once the garlic is beginning to turn golden, add your prepared vegetables, and stir fry for a few minutes. Then season to taste with basil, oregano, thyme, salt, and pepper. You can add more olive oil and seasonings at any time if needed.

Add cooked meat to vegetables. Cover pan and lower the temperature. Check and toss the mixture every few minutes. Once the vegetables are cooked through, add the mixture to the cooked pasta, and toss to get pasta coated with seasonings as well.

Top with cheese (I usually use mozzarella or pepper jack) and tomatoes and/or olives and serve warm.
