To make lunch healthier for my kids, I take what they normally eat and try to make it healthier. For example, my girls love mac and cheese (a typical kid's lunch). Instead of buying the regular brands, I buy a natural brand called "Annie's" that has NO artificial anything (no chemicals). It's all natural and high quality.
You can find Annie's in the organic section of your grocery store. Be sure to read the instructions. They are a little different than making a regular box of mac and cheese (for example, you don't use butter).
Then I add frozen peas in while the mac and cheese is boiling, so the kids eat some veggies with it. And I always add a side of fruit (a few strawberries or blueberries).
I try to do this with everything I make for lunch. If I can figure out a way to make it healthier, I'll do it!
