I searched for a good whole wheat bread recipe for 10 years and finally settled on this one. The last cup of flour is up to you. It depends on if you have a low protein flour or high protein flour.
The dough might be a little sticky. It is ready when it pulls away from the sides of the mixing bowl.
4 cup warm water
2 1/2 T yeast
1/4 - 1/2 C gluten
1 scant T salt
1/2-3/4 Sugar/honey
1/2 C oil
9-10 C whole wheat flour
Mix everything but flour and leave until frothy (20 min)
Add half of the flour (I only have a small mixer) and beat on medium high for ten minutes
Add the 2nd half one cup at a time
Rise till doubled
Loaf out (3 large, 4 medium)
Rise until 2 1/2 times
Bake at 350 for 30 minutes
