My husband and I love Indian food, and while all of the ingredients aren't always easy to find, here's something I tried that we liked a lot:
Tandoori Chicken Kebabs
4 boneless, skinless chicken breasts
3/4 cup plain yogurt
1 tsp garam masala (easily found at any grocery store)
1 tsp grated fresh root ginger (ground ginger works as well)
1 tsp crushed garlic
1 1/2 tsp chili powder
1/4 tsp ground tumeric
1 tsp ground coriander
1 Tbsp lemon juice
1 tsp salt
few drops red food coloring
1 small onion, cut into wedges and separated into layers
a little oil, for brushing
Chop the chicken into 1 inch cubes, place in a mixing bowl and add all other ingredients except onions and oil. Mix well, cover and leave the chicken to marinate in the refrigerator for 2-3 hours.
Preheat the broiler. Thread alternate pieces of marinated chicken and onion on to four skewers. Brush the onions with a little oil, place on a grill rack and cook for 10-12 minutes, or until the chicken is cooked through, turning once midway through.
Serve with naan bread (also not hard to make) and basmati rice (again, can be found at any grocery store).
