Cream of Zucchini Soup

A great dinner idea for your overflowing garden of zucchinis!

3 cups grated zucchini
1/2 cup water
4 Tbsp. onion - chopped
1/2 tsp. parsley
1 cup milk
1/2 pint half & half
1 tsp. All Season salt
2 Tbsp. butter
2 Tbsp. chicken stock (vegetable stock for you vegetarians)
2 Tbsp. flour
pepper

Make a sauce with the melted butter, flour and salt. Add remaining ingredients and season with pepper. Boil for 20 minutes. Blend in the blender before serving for a smooth soup.

Great soup! I made this last night and loved it! ONE WARNING: When you go to blend the soup, be careful! I didn't have the lid on the blender very tight and the hot soup sprayed all over. It was rather funny in retrospect, but it was a good thing that the very hot soup missed me and instead landed on the counters, floor, sink and probably my ceiling! Nice learning curve on blending soup!

Also, don't put more than the measured onion in. I think I put in too much onion. It was so good though. My husband even said: "I'd eat that again!"

That sounds amazing. I love most cream of anything soup--broccoli, potato, etc.
