If you want to have your children practice their instruments, you have them pick the music they want to learn. If they really love the music, they'll want to work on it.
They will probably pick music that is more difficult than they've had before -- I know I did. I still have some of the music memorized from over ten years ago.
When they are just learning, it's hard to stick to one project. I know it's hard to let them give up on one project and start on another. Still, it may take a few "try and fail" attempts until they are passionate about one piece of music.
As they try new music over and over, they will increase their skills and pick up new music more quickly.
