Organic Mexi Soup Perfect for Fall

This is my friend Nicole's recipe. It's so easy to make and I absolutely love it. Even my husband, who hates beans, will eat it. My six-year old loves it and says it's the "best dinner she's ever had" (we need to get her out more often - Haha!). My four-year old liked dipping her chips in it (it's a start). Hope you enjoy!

1 medium organic onion
1 tablespoon olive oil
1 can diced tomatoes
2 cans organic corn (drain)
1 can organic kidney beans (drain)
1 can organic black beans (drain)
1 can organic pinto beans (drain)
1 package ranch salad mix seasoning
1 package taco seasoning
5-6 cups water

Saute chopped onion in olive oil in large pot. Add all ingredients. Let simmer on stove for 2 hours.

NOTE: You can add grated cheddar cheese, sour cream, avocado or baked Doritos crumbled up.
