I was making my cookies today and thought about your plight. Baking with whole wheat actually tastes pretty good. I made whole wheat cinnamon rolls for my students in a high school ballroom team and they said they were the best they'd ever had. (I was really afraid they wouldn't like the whole wheat part.)
This recipe is a sure win.
preheat oven to 350
Cream together
2 eggs
1 tsp vanilla
1 1/2 cups brown sugar
1 cup butter (if you want to substitute applesauce or hummus for half the butter)
Add
2 cups oats (put them in a blender or coffee grinder until they become flour)
2 to 2 1/2 cups whole wheat flour (look for consistency you like-i usually only use 2 cups)
1 tsp Salt
1 tsp Baking soda
1 tsp Baking powder
1/2 bag semi sweet chocolate chips
1/2 bag milk chocolate chocolate chips
Mix completely.
Use a table spoon measure and a small spoon to assist in flattening the scoop and removing to go onto the pan. Makes several dozen cookies.
Cook at 350 for 12 minutes.
I usually let the first batch sit on the pan for a minute or two before removing them.
