Vegetarian Thanksgiving Ideas

It depends on what type of vegetarians you are serving...

If the vegetarians are ovo-lacto (meaning they eat eggs & dairy) it makes it much easier. There is a really good vegetarian turk'y roast made by Quorn. You can find it in health food stores (like Whole Foods, Good Earn & Wild Oats). They sell out closer to the holiday, so you'll want get yours early.

For gravy, chop an onion, use Swanson's vegetable broth as a base and season it to taste with sage, garlic powder, salt & pepper. I also sometimes use parsley, thyme & rosemary to season along with fresh mushrooms.

As for stuffing, I use Mrs. Cubbison's brand stuffing and follow the directions using margarine and Swanson's vegetable broth.

VEGAN
If the vegetarians are vegan (meaning no meat, no eggs, no dairy) contact the health food store for a vegan roast (Tofurkey brand roast may be vegan--I'm not sure). Mrs. Cubbison's works for the stuffing (use Blue Bonnet Light margarine--it has no dairy).

As for potatoes, use Blue Bonnet Light margarine and Silk Plain soy milk instead of regular or canned milk (you can generally serve this to your non-vegan guests too--mine don't even know the difference). And for dessert, try making a pumpkin pie with tofu (you can generally find recipes on the back of the Silken brand tofu found at the health food store). You can also try making apple pie (with margarine instead of butter, etc.).
